  • I've made this a couple times, and areas of the chicken keep coming out soggy. I'm cooking it according to the video, and using a cast iron skillet. Any idea what I am doing wrong? Am I using too much flour?

  • @overdrive2023x It seems like the temperature is too low. Try increasing the temperature, and I don't think any of the chicken will be soggy!

  • @supertrex2 I put hot water in it an soak it until crumbs, etc. are loose. Then I remove as many of the crumbs as I can and discard them. After that, it is easy enough to wash the skillet just like a regular skillet. (I prefer not to soak a cast iron skillet overnight, because it may then need to be re-seasoned.

  • Stove oven combo is the only way to really imho to come out with juicy chicken but done chicken. lol I like to add pepper,salt,paprika, garlic powder and onion powder to the flour to add some real kick of flavor.

    Forgot to mention just watched America's Test Kitchen and they added 1 tsp of baking powder to the buttermilk and 1 tsp salt, letting chicken soak for at least 4 hrs. Then dredging in the flour etc. The baking powder works in unison with the buttermilk tendering the meat but more importantly aids in a better crust. Being from KY too I can eat chicken 5 x's a week so can't wait to try it and see it works.

  • @countryconspiracy I keep clean jars under my sink--like from mayonnaise or Italian sauce. I put oil that I don't plan to re-use in them until each is full, and then it goes in the garbage. It is very neat and clean.

  • @bettyskitchen I completely understand. I do have one question; Doesn't your oven get rather messy since you put the fry pan with the oil in it to bake? Last comment, you look good in black.

  • @don417 Thanks for your compliment! The oven does get spattered a bit, but I do so much cooking and baking that I run the oven cleaner regularly. If I didn't have an oven cleaner, I would be more watchful about frying in the oven. I will be showing stove top fried chicken with crust next week!

  • OK so. I made this recipe tonight. I did it just the way Betty does except I seasoned the flour with a splash of cayenne pepper.

    I made 2 batches. 25 minutes struck me as too long to fry chicken so I only went with 20, and I didn't brown it long enough on the stove-top before hitting the oven. It came out a bit too lightly browned for my taste, but it was still good. Second batch I was much more careful to brown and it spent the full 25 minutes in the oven.

  • Betty's approach to fried chicken breasts is a good bit simpler than mine and I suspect it is just as good if not better. Combine this with her Fried Chicken Gravy recipe and mashed potatoes and another veggie and you've got a very nice meal indeed.

    Seriously though, if you don't have a cast iron skillet like Betty's buy one and learn how to take care of it. Get a 14" one like Betty is using though. It's good for cornbread and all sorts of things.

  • @dannyjn I don't really have a problem with the oven getting splattered with hot oil. If I do a lot of frying in the oven, then I need to clean it occasionally.

  • I did it just like you did, except i used a chicken seasoning rather than meat tenderizer. It turned out great. I made 2 servings: One for me, and the other for......oh yeah, that's right, me!! -:)

    I'm an amateur body builder, so i actually need to start caring about what I put in my body now, and since I'm also a narcissist, i ended up forcing myself into a cooking habit; well, at least mom will be proud.

I did everything like you did however i washed my hands before touching the seasoning and flour bag. i didn't want to get raw chicken all over it. I also prefer to use tongs besides piercing the meat that i just seared. Thanks

  • @athloe123 I like cast iron skillets best. You definitely need a skillet with a handle that is ovenproof!

  • @siscopiso Yes, you can use any chicken pieces. It will take the same temperature and amount of time. If some small pieces look as brown as you want, you can take them up early, but the rest will be done very soon.

  • It would be better to have the oil heated perfectly, but , if it's not, then it's okay for it to be lower, because it will heat quickly. If you have it too hot, the flour may burn, and also the oil may smoke, which is not good at all!

  • Betty, I made this chicken and it was delicious!!!! My goodness was it delicious. It did not need anything! usually people season chicken to death with season salt, garlic, onion powder, etc...this stands alone with just the tenderizer and pepper. I am making it tonight (2/2/10), for dinner with salad and King Hawaiian Sweet Dinner Rolls. Thank you again...keep the recipes coming.

  • This is fried chicken; it's fried in the oven for convenience, but you can leave it on top of the stove until it is done, if your prefer! I have several types of fried chicken on bettyskitchen.

I was wondering if vegetable oil could be used inplace of peanut oil? I have a family member with an allergy to "peanut" everything.

  • Aw just watching your video makes me happy! I'm from Canada and the only southern food I've ever had is from KFC (which I don't think counts when it comes from way up north here haha). You seem like you would be a great host and cook!! I will definitely try this out on some friends. :)

    but, you could use a plate to put the flour and pepper, so you avoid having flour all over the floor by shaking that plastic bag... I LOVE TO COOK, BUT IN THE CLEAN WAY...

  • Yes, you can use a plate for the flour and pepper, but I always hold the plastic bag together tightly at the top when shaking it, and there is *no* flour on the floor--It's just much easier for me that way, but nothing wrong with using a plate!

  • Southern foods are tasty but if you eat them wrongly prepared sometimes you get too much fat with all that frying. I like what you did with this to cut down.

  • Yes, salt would be fine. Meat tenderizer has a tenderizing agent that makes the chicken a little more tender--but not necessary! Thanks for your question!

  • thanks for the video. As for chicken at room temperature, I haven't seen prior response but I agree with you that it shoudl be brought to room temperature before cooking, otherwise it won't cook through properly. At the same time, I have to object to cooking chicken out of the wrapper without washing. Chicken processing is notoriously dirty--I always clean mine in vinegar and salt water first. Its a must.

    And I'm hardly a germ phobe, but if you check into the process, you'll do the same.

    I dont think room temp chicken is ever safe. The chance of you and your husband getting sick a great when chicken isnt handled properly. I hope to see more recipes from your kitchen
