Those aren't mummies. Aside from the fact mummies wouldn't be that fast or agile (they're dry husks) a mummy has no internal organs, and the enemies clearly have red hanging out of them. And a mummy is of course a brown dry corpse.
My theory is that they're badly burned monkies that make a habit of ingesting napalm on a daily basis.
