My problem with these videos is they always look like they're done with a fisheye lens. Is that the lens the camera comes with or was it modified to be extremely wide?

@PyromaniacStudios There are 2 setting with the camera. you can have it on wide or the normal view. you can change it in settings.

Nope

There is the ability to change the resolution and fps. Which in turn changes the cameras field of view.

This video was shot in 1080p @ 30fps.

If I were to shoot in 720p @ 60fps, the field of view is actually larger, than shooting in 1080p

This camera comes with a wide angle lens. There are after-market lenses available with a smaller fov, but changing them voids warranty.
