Not bad. But you understand a boner is much quicker? A couple of pointers to help you. There is no need to mark the back down when taking out the H-bone. That will save you two cuts right up front. Second on your opening cut 'lay the knife down' and angle toward the socket while following thru down the fillet on the right. Do the same on the left. Thats a total of 2 cuts opposed to your 5. I counted 21 cuts when it should only take you maximum 7 cuts. 5 to slash bone. 12 cuts in total.

I don't know why meat cutters think everythings a speed competition. I can tell you shop profits & quality are by far more important. Out of a chain of 32 stores ours in consistantly the most profitable, attractive, well stocked & cleanest.

Meat cutting is not exactly brain surgery, I grew up in it & started young in a family business. We did the whole process from kill to freezer. I managed a Kroger F4L market while still in my 20's. Retired now. It's nothing to get puffed up about, like I said it isn't brain surgery. The most successful meat guys have a clue about a lot more than cutting meat fast.
