@andrew1p1 Because the mixture contains butter when your working with it the temperaure of your hands causes it to warm. By putting it in the fridge your allowing it to go back to its solid state and i personally find it 1 easier to handle when cutting (as it preserves the shape you want better) and 2 i believe i can taste a difference once cooked. Its personal opinion whether to do it or not but i just find it helps a lot.
