actually, you don't get a constant angle unless you can ensure with each stroke the stone is perfectly perpendicular to the knife edge. as the length of the contact points (the knife edge and upper guide edge) varies, so will the angle. Still, I think it's is innovative and probably produce better results than what a beginner can do. It's a worthy alternative to proper technique.
