Secondly, he has always shown favoritism toward Batali. He just loves the guy. I get that--he's a lovable guy--but I think it ends up making Alton look bad as a commentator.

I am a chef, and travel extensively looking for new vegan dishes. Chickpeas feature in many foods in middle eastern countries. Also, I appreciate the skill with which the chefs on ICA treat any ingredient, vegan or otherwise. It is fun to recreate these dishes with substitutions, also.

@Michael55443 no, the point i was making is that every thing he used was natural or derived from a natural product e.g. agar agar is a sea weed extract, no different than gelatin (a pig or other animal extract usually from their feet or bones).... nothing he used was "chemical". The lecithin he used came from eggs. I could go on.
and secondly about the "lack of classical approach to cooking"... he trained at the french culinary institute of america, so i think he's very classically trained
