@MotoXwife - Great question! You can definitely use different kinds of rice, but the consistency and chewiness of the rice grains will vary along with the cooking times being slightly different. As for doubling or tripling the recipe, you can definitely do that, just make sure you have a big enough pot and to make sure to stir often! I hope that helps! @stephaniedayrit - That's a great question! Washing your rice was more common back in the day, but now I think that the consensus on washing your rice is more of personal preference. Some say that washing your rice will help it be less gummy and starchy while others say it is a waste of time and water. In all honesty, sometimes I wash my rice and sometimes I don't. In this recipe for rice pudding, I don't mind if there is extra starch, so I simply do not wash the rice. I hope that helps!
