  • I think egg whites are a generally accepted part of the modern sour. Whilst egg whites are not mentioned in the paticularly old books for example how to mix drinks (1861) or the savoy cocktail book (1930) I think that egg whites provide a smoother mouthfeel and add a silky texture to the drink, something that is desired with a sour.

    Dash of bitters is nice too. Float some red wine on top for a new york sour, also very tasty.

  • Three cheers for the Sour glass! What they are using is not really a Sour glass, but it's nice to see somebody that actually cares about using the right glass for this.

    BUT THEY RUINED IT BY POURING OVER ICE!! Ack!! Ice kills the froth and waters down the very delicate balance of sour/sweet/whiskey flavors :(

    Egg whites are in none of my older books from '20s to '70s (which is the heyday of this drink). Use powdered sugar and a LOT of ice in the shaker and you get a decent froth.

  • @onedollarphilistine I happen to really like the egg white. I'll be sure to try the powdered sugar idea, though. And I've always poured these over ice, as well... thanks for the insight!

  • egg white...is a key ingredient in a sour and it will not froth up without egg white.

  • @bolch88bb8 No its not, you watched the other bartenders on youtube. I am a bartender and bought a book that was made almost 50 years ago and NONE of the recipes contain egg white. Trust me, stick without egg whites, and especially grenadine.....

    I would also garnish this with a slice of orange on the top of the drink, make for a good garnish and good to eat after you finish drinking.

  • @JoeGriffin7 never used orange for garnish in a whiskey sour and i also have worked in bars for years...egg white is standard in any sour i have made except when someone requests no egg white. Grenadine never in a sour..its too sweet and alters the taste of the whiskey
