@lespaultommy You are very rude. It actually looks like a pretty good coffee for the quality of the machine that she used to make it. A lot of the tips were good for someone who would be in the same situation ie a home user with the same quality level machinery. Pretty sure 'your boss' wouldn't have you making coffee on a breville machine ;-) But I see where you're getting at.. this is not the 'Perfect Latte', but it's a good starting point for people wanting to learn the basics.
There is just one thing I don't get, well two things really.
1. Why do you pour the coffee from glasses into the cup. aren't you leaving most of that lovely crema on the sides of the glass. Isn't that where the lovely taste comes from.
2. Whenever I froth the milk, no matter how purrfect it is. If I left it as long as you do before pouring, the milk has separated again (froth on top, milk below) and is no longer that nice creamy consistency. How do you keep it creamy for so long.
2) Always "blend" your frothed milk- basically, give your jug a good tap on the bottom to get rid of excessive air bubbles, then "swirl" your milk around by moving your hands in a circular motion. That'll make sure that your froth and milk are blended together so that when you pour they'll come out evenly at the same time and you wont need to spoon your froth out. You can tell you're done because the 'island' of froth in the middle will dissapear.
@LeDucDArcachon 1) With milk based coffees, you don't really taste much of the crema any way. The glasses may be used for measuring the shot. Being a training video, I'm guessing that's why she uses them. If she was making, for example, a long black, I highly doubt she'd use the shot glasses.
2) Swirl the milk until there are no clunks of foam left. She would have done that, just cut it out because its boring to watch.

Hi Sammy,
I think we're actually using the regular portafilter not the dual wall filter.
Traditionally, the dual wall filter is for newbies. As you get better at pulling a shot, you'll see that the other filter will serve you better.
