  • Oh, also, you don't have to use your fingers at all, you can put the truffle into the selected topping and then just gently shake back and forth the small bowl it's in to coat.

  • Works better with heavy cream cooked just till it simmers and then poured over finely chopped semi sweet, or bitter-sweet chocolate (difference is more sugar, or called 60-75% chocolate - Bitter being 80 and higher I think) Hot cream will melt the chocolate, stir then you add whatever flavoring you want then you set it in the fridge for about an hour then mold and then toppings. GOOD quality chocolate, makes ALL the difference, nestle is cheap chocolate, but most people have it on hand.

    put it in ur mouth and let it sit. close ur eyes while saying "mmm" to look like one of those chocolate commercials.

  • will this work with white chocolate ? i need to know cause i tryed the version where you had to use heavy cream but it wouldnt harden enough so i was wondering if it would harden with the sweetened condensenced milk ? im trying to make white chocolate mint truffles

  • @darksinger13 well yeah cause its still chocolate. when u used cream u made a chocolate ganache (the soft chocolate covering you find on cakes sometimes) the only difference with your chocolate choice is the colour...

  • @darksinger13 Not really. It has to do with the chocolate liquor content being non existent in white "chocolate" which is actually not chocolate at all, it's cocoa butter and contains no actual trace of "chocolate". It's the science behind how truffles work. As you said your self, it won't harden, milk chocolate doesn't work well either for ganache which is the truffle "filling" or essentially the truffles itself. However you could do a white chocolate coating to mint dark chocolate truffles
