Yucatecan Snacks: The Panucho

sorry, this is NOT a Panucho, this is called SALBUT, the puffy one, a panucho is a hand made TORTILLA, filled with black beans, and then is fried... im from Tekax , yucatan, now living in Cuernavaca, Morelos running a cochinita pibil place ; )

this not the way to make panuchos!!! you cook the tortillas first in a comal, wen they puff up you make a hole in them and you stuff them with black beans, then you fry it, once crispy u add the toppings!!!!!

I had some with the beans inside the tortilla, and they contained chicken instead of pork.

@chingonm1 what you ate IS a panucho...without the black beans inside, if I'm not mistaken, it's called a salbute. That's the only difference. Typically, it's made with turkey.
