The words are largely immaterial, the purpose of the composition is to introduce children to the instruments of the orchestra. There is no agreement over whether the tale was wholly original or derived from earlier folk tales - the latter seems more likely, just as modern western fairy tales are derived from patchworks of darker, earlier tales.
The subtitles were obviously written by someone who didn't understand British accents.My guess would be computer captioning, as most people would have spotted the silliness of some of them.

My three and four year old really like this. They would love to see the third part. It is wonderful that the children can see the actual instruments that represent the animals.
