It was something called 'lovage'. There is a small wikipedia page on it if you're interested. I'm from the south and haven't tried it before either. She made me want to grow some to try it though :)
I can't get over the fact that you home grow everything.. it's so beautiful.. and healthy.. wonderful! I am so glad I came across your channel I hope you are still around ... I will be back more and more.. I love one pot winter meals.. Looking forward to seeing more of you!
You say that the sweet potato cooks quickly, yet you cooked the marrow and carrots for 3 hours!!!
And with that amount of water it would take about 7 hours to reduce it to half! In the end your left with extremely mushy vegetables, very runny stock, dumlings and sweet potato :S

I am from England.
The herbs should grow fine in the US.
You might need to give it some compost and shade. If you live in a dry state.

no it doesn't because the meat has been diced.
also you get more flavour when you add the meat.
