Can't be done. The closest you could do would be to give him flat textures, which would give him a soft shading.

I know it's already been done before, but if memory serves right, they gave him fake shadows which in my opinion didn't look right.

Tell you what; I've been working on several texture hacks recently and I've yet to make new videos for them, but if you want I'll make a flat-textured Toon Link and include him in my next video. How's that sound?

The mask is part of the Model, so taking the mask off would look like taking a piece of an eggshell. All you would see is emptyness. Pretty much a hollow Metaknight :P

Actually, I'm pretty sure the "nice" Bob-ombs were pink, not red. Close enough though.

But these are pretty awesome hacks. Being able to shoot giant CDs and then collecting them looks pretty fun. And that was some nice timing at 3:31 with the Bob-omb.
