@elysium2010au I don't use corn syrup any more because it is almost guaranteed to be made from genetically modified corn. It works fine without it. Good luck!
@jcruz04 No, it would probably be too thick for a sauce. If you want it pourable,, just don't cook it as long. If you want it hard, like hard candy, cook it until it is darker and it will harden up as it cools.

I store mine in the fridge, but I'd expect it to do fine at room temperature because the sugar will act as a preservative and there is very little moisture to support bacteria. The only concern would be that it might mold eventually if it was exposed to air. That's probably why caramel is usually wrapped tightly in plastic.

This caramel looks delicious, but do you not use a whole cup of corn syrup or butter? could you maybe write the recipe on your description, this caramel seems a lot less complicated than the usual ones. I would love to give it a try! it looks really milky!
Lately most corn is GMO, so it should be avoided, including using corn syrup. The cream used is equivalent to butter, so you certainly aren't saving calories or fat doing it this way. Thank you for the suggestion for a recipe. I just hate to write one until I've fully tested it. The way I cook is by feel, so it is difficult to get it right using exact measurements. But next time I make caramel (burfi), I'll measure and post the recipe, if it is good.

Yes, but you won't get the super creamy caramel that you get from using cream and sugar. Also a little salt and vanilla enhance the flavor even further. I don't use corn syrup any more because almost all of the corn in the usa is gmo, something that I avoid.
Although I do live in the country and have facilities for keeping a cow, it is still unusual to keep a milk cow in the USA. I don't know why it is so unusual: it only takes about 15 minutes to milk the cow and I have lots of back up help from the neighborhood girls. In fact they look forward to being able to milk the cow. So why doesn't every neighborhood have dairy cows? It would be so much more efficient and healthy than the mega-dairies that supply the grocery stores.
Sometimes I take this caramel to a potluck and make some without nuts. There are so many people who are seriously allergic to nuts. In India, it is usually made without nuts.
I no longer use non-stick Teflon pans. Common sense would dictate that they are not healthy to eat from if over-heating them can kill birds. Now I just cook it in a heavy-bottomed stainless sauce pan and haven't had any problems with sticking.
Actually when I make this recipe I call it "burfi". It is a traditional sweet made in India. However if I titled the video "How to make burfi", it wouldn't make sense to too many people.
MUCH easier method. Take a can (several if you want more) of sweetened condensed milk. Remove the label(s). Place in a pressure cooker. Add water to 1/2 over the can. Set pressure to 15 lbs. Turn heat to medium. When it starts to release steam (at pressure) set timer for 20 minutes if you want caramel dip, 40 minutes if you want caramel. Place can in cold water before opening! For dip, stir. Open both ends of solid caramel. Use one lid to push caramel through. Cut. Enjoy!
Nice video. Why are you actually adding salt at the end of the video? Is that just for the taste, or does it have a chemical purpose?
Btw: lots of people I know cook caramel with only water and sugar. Lots harder to make, but maybe anyone here wants to try. It's 20 mL water per 100g sugar, if I'm correct. Watch out for not getting the pre-caramel burnt: place a somewhat larger pan with cold water next to your pan to quickly cool it.
The salt is just for taste. If you make caramel out of just sugar and water it isn't nearly as tasty. You can actually just heat the sugar without adding any water. The sugar will melt suddenly when it is hot enough. If you get it too hot it will be very hard--a hard candy--when it cools. If you add the water to the sugar, the mixture cannot go above 100º C until all the water is boiled off.
If you use cream, it doesn't stick. When I made this video, I used a non-stick pan for the final browning of the cream/sugar mixture, but have since nixed the teflon. Now I just use a stainless steel, thick bottomed pan and it doesn't stick. If you use milk instead of cream it will be much more likely to stick. If you do get sticking, remove it from the heat for about 60 seconds and the sticky will be more easily removed by scraping with a spatula on the bottom of the mixture. Good luck!
It might be hard to keep it from sticking to the pan, particularly when it gets cooked down a bit. And it wouldn't have the rich flavor that comes from cream. But it would be worth trying if you don't mind risking burning it. I no longer use teflon pans, so I wouldn't try it myself, however let me know how it comes out if you try it.

Although I do live in the country and have facilities for keeping a cow, it is still unusual to keep a milk cow in the USA. I don't know why it is so unusual: it only takes about 15 minutes to milk the cow and I have lots of back up help from the neighborhood girls. In fact they look forward to being able to milk the cow. So why doesn't every neighborhood have dairy cows? It would be so much more efficient and healthy than the mega-dairies that supply the grocery stores.

so you start off with the cream from unhomogenised milk, is that the same as regular store bought cream? what kind of cream would I need?

You can use store bought cream. The richer the cream, the richer the final product. You can use anything from half and half to heavy whipping cream.

May I ask if adding nuts is nessesary to make caramel? The reason I ask is my husband does like nuts. Can it be done without them?

You don't need nuts to make caramel. This was just to improve flavour.

Sometimes I take this caramel to a potluck and make some without nuts. There are so many people who are seriously allergic to nuts. In India, it is usually made without nuts.

I no longer use non-stick Teflon pans. Common sense would dictate that they are not healthy to eat from if over-heating them can kill birds. Now I just cook it in a heavy-bottomed stainless sauce pan and haven't had any problems with sticking.

To sanjuro772000, your method is not really caramel. That is actually Dulce De Leche.. Caramel is not made like that.

Actually when I make this recipe I call it "burfi". It is a traditional sweet made in India. However if I titled the video "How to make burfi", it wouldn't make sense to too many people.

MUCH easier method. Take a can (several if you want more) of sweetened condensed milk. Remove the label(s). Place in a pressure cooker. Add water to 1/2 over the can. Set pressure to 15 lbs. Turn heat to medium. When it starts to release steam (at pressure) set timer for 20 minutes if you want caramel dip, 40 minutes if you want caramel. Place can in cold water before opening! For dip, stir. Open both ends of solid caramel. Use one lid to push caramel through. Cut. Enjoy!

i think that, basically, you just cook it longer to make it harder. i made some caramel like this, and it turned out pretty hard (but tasted fine).

Nice video. Why are you actually adding salt at the end of the video? Is that just for the taste, or does it have a chemical purpose?
Btw: lots of people I know cook caramel with only water and sugar. Lots harder to make, but maybe anyone here wants to try. It's 20 mL water per 100g sugar, if I'm correct. Watch out for not getting the pre-caramel burnt: place a somewhat larger pan with cold water next to your pan to quickly cool it.

The salt is just for taste. If you make caramel out of just sugar and water it isn't nearly as tasty. You can actually just heat the sugar without adding any water. The sugar will melt suddenly when it is hot enough. If you get it too hot it will be very hard--a hard candy--when it cools. If you add the water to the sugar, the mixture cannot go above 100º C until all the water is boiled off.

If you use cream, it doesn't stick. When I made this video, I used a non-stick pan for the final browning of the cream/sugar mixture, but have since nixed the teflon. Now I just use a stainless steel, thick bottomed pan and it doesn't stick. If you use milk instead of cream it will be much more likely to stick. If you do get sticking, remove it from the heat for about 60 seconds and the sticky will be more easily removed by scraping with a spatula on the bottom of the mixture. Good luck!

It might be hard to keep it from sticking to the pan, particularly when it gets cooked down a bit. And it wouldn't have the rich flavor that comes from cream. But it would be worth trying if you don't mind risking burning it. I no longer use teflon pans, so I wouldn't try it myself, however let me know how it comes out if you try it.

Yeah it didn't go so well, but maybe that's just because I burnt it. It turned black, and when I scraped some off the pan, it just tasted burnt.
And yes it did stick to the pan, but the dishwasher got it off :)
Shame. Caramel's awesome.
