Try holding Left trigger to "compose" your player right before the shot. Also the power of the shot is dictated by how long you hold "B". You can also switch how powerful your shots are in the USER section of the game customization. Since you're playing on easy anyway just turn all the AI stuff lower than your own. It really is a great game once your figure it out. Bugger on EA for thinking EVERYONE should know how to play their games.

And also about the delay when you press buttons. Its not an automatic press button-kick ball, it has to wait for the players next touch of the ball after you release the button.

And also the whole, running the length of the pitch with one player. Which is the equivalent of getting a touchdown from a punt return, it almost never happens.
