It's compressed air, and when a gas is expanded (ie when it comes out of the can) it cools down by quite a lot, which freezes the moisture in the air, so no.. it didn't foam up.

It didn't freeze, it just got Liquid Nitrogen crystals to form on it. Try it at home, it stays that way for maybe 20 seconds if your lucky.
