There was a delay because Microwaves do not cook the entire thing at the same time, the centre is actually cooked before the outer and the heat generated dissipates outwards which finishes cooking the rest of it (hence why microwave meals often say to leave them to stand for a minute before serving). So as it continued to cook it expanded in the shell.
