I am a Scottish Michelin starred Chef and you know when you scrape your Henckels knife across the board piling the Shallot together again?, that's actually dulling your knife.
In the video I mention storage - shallots are a root veggie, so don't store them in the fridge. The fridge is too moist and the shallots will rot. Store them in a cool dry place like your other root vegetables. ~Rita
