O-o i normally just put my sugar and water in the pot leave it till the sugar dissolves and around the edges turns a yellow then i grab the handle of the pan and move my wrist in a circle ( No idea what in the hell people would call that lol) to mix it over the heat till its nice an caramelized. I mean it avoids the nasty clumps and what not O_o and i use a cool ladle not a plate cuz its so much easier to get the spun sugar off a cooled ladle.. But *shrugs* to each their own i guess lol
LOL the caramel was all crystalized and he used only 1 fork, did not even make enough threads. The temperature was wrong, they looked so thick... HAHA have to agree with delaboy1234
but how do you get it off the plate?? I've heard of using wax paper underneath your spun sugar - that way you can peel back the wax paper with out destroying your sugar sculpture.

It will come right off a plate like that. His sugar wasn't at right temperature (370°) and his technique was crap.
