You need to use manual, if you arent already. You need a mushroom before you go to the edge and then you press the drift button once to get more elevation, and then you should land it.

0.54:

you still have to use manual. :) You press the 'B' button right before you let go of the mini turbo, and you should land it.

1.26:

I am not 100% sure about this one with wii wheel, but I do know that you can do it with gamecube controller and wii mote.

3.16:ctd on next comment. :)
