Last time I used mayonnaise: Large spoonful in a pan; heat; watch small amount of egg separate and cook, leaving a pan of oil with a tiny bit of egg in it.
@tbyrdrandom Canola and grapeseed are neutrally flavored. Olive oil has its own distinct flavor. That's not a bad thing, mind, as long as that's the kind of flavor you want in your mayo.
@tbyrdrandom light olive oil will work, as will canola, grapeseed, or vegetable. Don't use extra virgin olive oil, as blending it releases bitter polyphenols. Better to start with canola, then whisk in extra virgin by hand in a bowl it that's what you want to add.
How long will this store in the fridge? If I happen to want to make a mason jar full...
