  • Kenji, a pretty obvious question, but just to make sure. I prefer Mexican mayonesa, made with lime juice instead of lemon juice. Will a simple substitution of lime juice work in this procedure?

  • @Phillychuck You can get pasteurized eggs, or in a pinch, you can use egg beaters.

  • Tried this twice and it didn't work either time. I used sunflower oil which I don't think should have hindered the process or would it? Will try again another time.

  • @islandbhoi No, it should work fine with sunflower oil. Was yor container the right size to just fit the hand blender?

  • Last time I used mayonnaise: Large spoonful in a pan; heat; watch small amount of egg separate and cook, leaving a pan of oil with a tiny bit of egg in it.

    Uggh.

  • @CubicSymmetry It depends on the blender. If the jar is narrow enough, you might be able to. Definitely not as foolproof though.

  • @tbyrdrandom Canola and grapeseed are neutrally flavored. Olive oil has its own distinct flavor. That's not a bad thing, mind, as long as that's the kind of flavor you want in your mayo.

  • @tbyrdrandom light olive oil will work, as will canola, grapeseed, or vegetable. Don't use extra virgin olive oil, as blending it releases bitter polyphenols. Better to start with canola, then whisk in extra virgin by hand in a bowl it that's what you want to add.
