I agree with the IBS bunk that doctors come back with... IBS is the effect, not the cause. My question is what is going on with food. 20 years ago no one even heard of celiacs disease. Why are so many people getting it now?
@FrugalandLazyCook It's because there's more awareness now and doctors are starting to test for it more and more, because 20 years ago they thought it was a childhood disease that one could "grow out" of. This is incorrect, as we know now, as it's a lifelong autoimmune disorder. Additionally, the gluten content in today's wheat/modern bread has risen to alarming levels and so people are being exposed to far greater amounts than in the past.
@bes508 I agree with the awareness factor. Media and information is more available today than ever. Still though, there seems to be a surge beyond just heighten awareness. It seems more and more people are experiencing food related illness and the one thing that has notably change in the world is how we produce food. I would love to see the real analytics. Thanks Bee : )
@FrugalandLazyCook I agree with bes508. Also it's become popular because it was seen as another "loose weight quick" kind of thing, at least that's what I saw making it blow up a bit. I could be wrong.
