I know you're supposed to add flower before egg and bread crumbs, but can you explain why? I've had perfectly good results (at least with fish) skipping the flour all together.
the flour simply dries the surface of the protien and makes a better base for the egg and crumbs. The flour and egg form a thin "batter" that the crumbs stick a bit better too. I've also skipped this step before with fish, sometimes you can get away with it. For chicken I recommend using the flour.
looks great! chef john i had Chicken Parmesan but only with the mushroom gravy and cheese and ham stuffed inside the chicken is it possible for you to show how to stuff a chicken breast the right way???
to be honest, im not a fan of stuffed chicken breasts. By the time the stuffing is cooked the chicken is dry. Just cook the chicken and stuffing seperately and you'll have great chicken and stuffing. I may show a whole boneless stuffed chicken though...just to show off.
Oh man! Chicken is my favorite meat so this looks super super super delicious!!! By the way, are those Panko bread crumbs the same crumbs Japanese restaurants use for Chicken Katsu?

Looks wonderful. My chicken parm never looks so neat. I usually use the Progresso bread crumbs. I'll use panko next time.
