  • Oh...My... Goodness!!! I'm in the final stages of preparing this, neck bones and all! And It tastes incredible!! I've never had meat tis tender, and there is soo much flavor from the bones. will definately make again!!!! Thanks for the recipe! and i will most certainly enjoy!

  • oh, i thought one of the main ingredients is true blood. lol! that would be icky! but here in the philippines, we have this dish called dinuguan or bloody soup. and its main ingredient is pig's blood. it's a very popular dish here. maybe you should try making your own version of it.

  • I like my pasta and sause seperate! Any mixing is done by me. Besides, if pasta is prepared and seasoned right, agument it with sauce, don't smother it! I get so pissed off when these jerks think they know what I like. When you order pasta from any resturant and it comes mixed, like this jackass says you must, don't be shocked that you'll be eating my left overs. My brother works in a 5-star joint, his stories are incredable.

  • Made this over the weekend. Excellent!! I brought everything to a boil first, then onto back burner on to simmer. Took 5 hours that way. At 3 hr mark added 2 bay leaves after skimming the fat off. Used italian parsley at the end. Butcher only had a pound of small neck bones so used 3 pounds of beef back ribs; the upper end of the bone is "neck" bone. Worked well.

    BTW the onion ring recipe is a keeper too!!

  • When I go to the store to buy the meat, do I just ask for neck bones or is there something more specific I should ask for? Do grocery store meat counters usually carry this or do I need to go to a meat market? I've never cooked with neck bones before so this should be interesting!

  • @harmonem Depending on what grocery store you go to. Many places such as Kroger or Marsh might have it on hand, but you might have to call the store to fing out, or if you go there, ask for neck bones. If a meat market is closer, then just go there and get it. Hope this helps.

  • Chef John, This recipe is amazing as you made it here! I tried it out, today. I couldn't get neck pieces as big as those, so these were good to go in like 3 and half hours. I didn't use macarroni pasta, I used the regular one ( spaghetti ) and I added a little bit of black pepper, it's just wonderful.

  • Slow food is the best. We make tsukudani at the restaurant and simmer it over a few evenings. We take it out every dinner service and put it back on the heat. Turns out unbelievable.

  • Great work again John, and although I'm sure this would taste fantastic I tried lamb necks in my slow cooker and it turned out... Well, I just plated it up in a garbage bag. Hoping that my attempt with beef will be better.

    Just an observation. At this time there are 12 people who voted your video 'Thumbs down'. This seems to be a 'standard' occurance which has me somewhat perplexed. Why do some people not like good cooking videos?

  • My mom makes something similiar to the neck sauce but instead she puts it on mangu(mashed green plantain) or sometimes on white rice..a complete meal!..yummy..I'm going to tell her to put it on penne next time..Thanks for the video..your the best!!!
