    Sometimes the skin or the mustard species itself may cause bitterness. You may try removing the skin by soaking the mustard overnight and then making the paste. Hope that helps.

  • Your way of cooking Ilish(shad) is not bad. I'm an angler and even I caught many Ilishes(shad) in Canada and in 2 weeks will go to catch them in Columbia River between Oregon and Washington state. Many Bengalis are not aware that fish from ocean or sea do not take much time like Ilish or sardine class fishes(oily fishes) and salmon. It just take one to two min each side to cook until the flesh become flaky or opaque. Over cooking the fish loses the oil and taste become different.

  • @bazlur ইলিশ (Hilsa in English) (Tenualosa ilisha) is NOT the same thing as shads such as the Atlantic/American shad (Alosa (Alosa) sapidissima). They belong to the same family but their genera are different. They have a similar enough taste/texture that one can be easily substituted for the other but they are still different fish.

  • I also want to say that most Indians cook in cheap pans and pots, although you can buy good pots and pans here in the west. Good quality pans and pots or cookwares make big differences. To cook in good cast iron pans get good and quick cooking. Cooking meat or fish in Cast Iron or modern cookware give you very satisfactory results. Try not to be stingy, if you spend 100 dollars for your food , you will not lose anything in life. People earn for eating and living well.

    Yes, you can follow the recipe with Rohu fish. But first you should shallow fry the rohu fish on all sides before putting it with the mustard sauce. This is suggested because the smell from the two fishes are different.

  • the reason for your dish becoming bitter is the mustard paste. you need to strain the mustard paste before using it. try this trick and feel the difference

  • I tried ur recipe but the gravy tasted bitter for some reason, Can u tell me why? Is it coz of te mustard seeds?? or mustard oil I don't know wat went wrong???? :((((((((((

    For this partcular dish, I would stay with the Hilsa fish :-) Of course, you can use Tilapia with mustard sauce, but taste wise they are far apart.

  • After marination, put the fishes inside a air tight container.Keep the container inside a pressure cooker. Add some water to drown the container until 1/4th.Close the pressure cooker turn the flame to highest and give one whistle.Simmer to slowest and cook for half an hour more.Open the container.Serve hot with rice. I like more in this way. Steamed ..... but not fried :p

  • Can you please guide me what appliances work best for making a mustard paste? I have a dry coffee grinder, which died because i used it for wet grinding like mustard paste and posto. I also have a blender which never does the job. I can never get a nice mustard paste :(

    We have used, over time, 2 different kinds of blenders (osterizer and cuisineart) both of which have worked pretty well for us. However depending on the availability, we feel you should be able to use other kinds as well. Other option is to use mortar and pestle, if you have one. Hope it helps you a bit.     hello..nice and super easy recipe..hope it will come out flavorful ..but can i just bake the mixture of fish and the marinade in a microwave instead of cooking them on a stove? and can I use king fish instead of hilsa?

    We cooked salmon with mustard sauce in microwave and it came out great. So we feel that hilsa should come all right as well, though we have not actually cooked the hilsa in microwave yet. So please go ahead and try it and let us know how it worked for you. You may also try the king fish with mustard sauce.

    cool :D I already have salmon and i will use this recipe to cook it in the microwave inshaAllah...may I ask how much time it took for the salmon to get cooked in the microwave?..I'm only going to do 1 to 2 filets of salmon btw

    Cover the marinated fish and then use around 6 minutes in medium setting of your microwave. It is difficult to mention the time as your microwave settings may be diffent than ours. So you may have to try it out with 6 minutes first, then put a fork in the fish and see if the fork pass through the fish fillet (indicating it is cooked). If more time is needed then cook another 2 minutes or so. Good luck.
