    Actually you can make japanese omelet(Tamagoyaki).

    But you should use Dashi.

    You can make dashi or may be you can buy "Mentsuyu"(Japanese noodle soup.

    If you can not get Dashi, please use little milk.

    We use not butter but oil.

    We use oil with paper.

    I really wish you to make delicious Tamagoyaki,

  • this is so frustrating to watch. anOTHER perfect egg roll. why is it that my egg always stick to the pan? i can NEVER flip it like THAT and by the time i scrape up the egg that's stuck, it's burnt. is it because i i'm cooking it too slow? maybe its cuz i take out all of the egg whites? i have a cast iron tamagoyaki pan though and it's brand new!....*sigh* i don't get it :(

  • Taking out the egg whites might really be a problem, because they set a lot sooner than the egg yolk. I make Tamagoyaki in my regular non-stick pan (it´s rectangular, coincidentially) and they turn out fine. Or maybe you just heat the stove up too much? Mine goes from 1 to 12 and 5 is usually enough for frying eggs.

    We add to egg Japanese "Dashi" you know bouillon or stock.

    It's made up dried shiitake mushroom and dried bonito.

    And Mirin , soy source, solt.

    But I've got a question: how did you get your egg mixture so 'yellow'? I tried to prepare tamagoyaki 3 times or more, but I always ended with light-brown or yellow-grey colour...

    Should I remove some of egg white?

  • If you use farm-fresh eggs, the yolk is much more orange, and then your egg mixture will look like this one.

  • Do you use regular or dark soy sauce? this must be the case. If you want your egg to look yellow, you should use light soy sauce.

  • Use eggs from organic farming.

    They are more yellow and healthier

  • I dunno bout other places,but this pan is sold at most big supermarket/hypermarket in Malaysia. Jaya Jusco will have it as it's Japan based,or was it Japanese owned,so there's a lot of imported Japanese stuffs there.

    We are very grad to come in useful for you.

    We make dashi(stock) with Katsuobushi(dried bonito flakes).

    Throw Katsuobushi into boiled water, and kepp a few minutes, and filter it.

    Seasonings are Japanese Sake, solt, soy sauce, and mirin(Sweetened sake).

    Good luck!

  • A restaurant chef showed me how to make this. Their technique was very similar however he could roll it with a flick of his wrist and very little assist from the chopsticks. He said to practice flipping a napkin in a pan to get the action. Good job!
