ah that's not oil in your bowl. it's mixture of peanut sauce and chili sauce, ah maybe a bit of sesame oil I suppose. :)

Actually it was in fact oil. They brought out a bowl of oil as a base for you to mix your own sauce with your choice of the amount. The choices were chile freshly ground, garlic, black vinegar, soya, and sesame oil. This was in my husbands hometown in the Szechuan province, the birth place of hot pot.
