The best wines made from berries, grapes or muskadine, Hint is, the fruit, if you leave it, starts to ferment in the skin. When you break the skin and squeeze out grape juice, it is not purple, but clear. Just plain grapes, squeezed, left with the skins, will ferment on their own. Same with apples and cherries. Next time instead of food processing, slice instead, and leave the skin on, use the core too. You'll have to strain it, but it will be great.
@sandrajeanification I will try that I will save me hrs of peeling and coring, although I have heard there is arsenic in the seeds that will kill the yeast and would be bad to ingest if you had a real lot of it.

Recommendation: you about a gallon of 100% pure orange juice and a couple handfuls of raisins. It will help balance your PH and continue to feed your yeast.
not going to get in the "science " behind it but try it on your next batch your yeast will be much healthier.

yes. Or you could just do it the correct sanitary and A LOT CHEAPER way and buy yourself an airlock and a rubber stopper. It cost 1 dollar for an airlock and sixty cents for a rubber stopper for a total of $1.60 for a set up you can use forever.
@TheWildNorth I don't have a gauge for it but I would guess a little less than store bought wine maybe 10-12% but I froze some and seperated the ice from the alchohol and it was much better maybe 20% + like a brandy or a schnapps
@TheWildNorth This stuff can get really strong... It all depends on how long you ferment it for and the amount of available sugar is in the wort. When I make mine, I like to add a half a bottle of honey and some corn sugar to it. The corn sugar, I believe is a simple sugar that's thus more available in suspension and easier for the yeast to break down. The honey just adds a nice flavor I think. I don't know about cane sugar or how that works as I've never used it.

I used 100% apple juice w/o preservatives and added regular yeast to one bottle and an apple peel to the other for the natural yeast. After three days they both started to smell really bad and they both stopped bubbling.

Home made apple wine. Can't beat the free bounty from nature! When I made apple wine I used the processed stuff off the grocery store shelf. For the yeast I used a champagne yeast. It took over 6 months for the taste to settle but once it did.... It was hard to not drink it all at once.

LOL that sounds like something I would do.Also have you thought about what you are going to rack them in?Racking the wine after it gets done bubbling is needed to get the crud out.Using real apples you will have lots of crud that settles in the bottom.You will need another of the same size jug you are fermenting it in to rack it.You might find enough bottles from friends and neighbors who drink wine or champagne.Champagne bottles are better.Or beer bottles for single serve size.
@harebrainedrabbitry I have a few more 5 gal jugs to rack them in and figured I would siphon them through a coffee filter leaving the bottom 5 inches or so of slurry on the bottom. I have 55 days to figure it out...lol

airlocks only cost .99 man. They not only keep the wine sealed from bacteria, but also let you know when its done fermenting when the bubbling stops.

We can't do this in the UK, here condoms are too big and too wide for the carboys. Obviously this is not a problem in the USA

Food processor = bad idea...pectin haze...instead try to freeze and hand crush...it will be easier than dealing wiht the haze/sediment it leaves...
Amount of air in the carboys....should top it up to the next of the carboy to prevent oxidization....
It aint bubbling like mad yet at day 3? What yeast did u use?
Also plastic = porous surface = bacteria that's why we all use glass.

campden tablets kill any wild yeast, Germs & Bacteria.
1 pill per Gallon. Crush the pill & add it to the must. It dissipates after 24 Hrs.
You can get them at any Home brew supply store, Cheep !
