  • @stargirlvictoria actually , it's spakanopita - σπανακόπιτα . this word comes from σπανάκι=spinach and πίτα=pie.

    the idea of the greek pies=πίτες is that you can make them with almolst any ingridient, some examples are cheese, milk(yes milk), chicken, with any vegetables, pasta&cheese .

    my favorite is the pumkin pie with cinnamon and honey, which of cource and be made with cheese instead of cinnamon and honey

  • siszam, you could try goat milk and butter since it dosen´t contain the same sort of lactose as cow milk dose,i´m lactose intolerat aswell but i can drink and use goat milk and butter without any probs or you could try finding milk and butter without lactose, but those usually taste horrible

  • I love this recipe and the creamed spinach recipe. Sadly, I am lactose intolerant. If you know of a way to make them without real butter and milk please let me know.

  • I've always made this way dish way before this video and I added chopped scallion to the spinach as well as fresh chopped dill & fresh chopped parsley.

    Man, oh man.... was it awesome!

  • Oh.......This was just soooooo good!!!!!! It was our supper with salad and talk about yummy! I love feta and this was excellent! I used Egg Beaters with 4 eggs and it was superb! I loved this crustless quiche with a Greek accent!

  • Yes you can put it in a pie shell just make sure you blonde bake your shell before hand so you don't get gooey pie dough. I even like to put a few scallions in mine.

  • Why is fresh spinach preferred? Frozen vegetables are flash frozen when they are fresher than the supposedly fresh spinach on your grocer's shelves. Both frozen and canned vegetables contain more nutrients than fresh vegetables due to this fact.

  • yes there is a good quality frozen product. no they do not have more nutrients. the reason for using fresh spinach is because very often you can taste that frozen or canned vegetables have been "forzen or canned"

  • @ seisei19: a quiche would have a short pastry base so technically its just an omlette. You could make this as a quiche if you layer it on a pastry base tho.

  • @xiiaobrandon I think he added the bacon so it adds flavor to the omelet. If you use plain meat, you might need to add salt and other flavor etc.

  • JimboJittsu- check out the website where the chef posts his recipes - the written intro is always very informative (and very often humorous), and you don't get to read it by only watching his videos on YouTube. I don't think he "pre-cooked" the spinach in water. He just wilted it in a small amount of butter in a heated pan for about 30 sec.

  • @Only3wishes, thanks! My learning disorder made me confuse the squeezing water out with steaming in water... I am guessing the precooking is to reduce the moisture from the spinach so it does not make the dish runny... Which means, yes you need to do this...

  • Yup much more like a Fritta or a crust-less quiche then a Spanakopita, because of the amount of eggs and lack of starch in the recipe.
