siszam, you could try goat milk and butter since it dosen´t contain the same sort of lactose as cow milk dose,i´m lactose intolerat aswell but i can drink and use goat milk and butter without any probs or you could try finding milk and butter without lactose, but those usually taste horrible

yes there is a good quality frozen product. no they do not have more nutrients. the reason for using fresh spinach is because very often you can taste that frozen or canned vegetables have been "forzen or canned"
@ seisei19: a quiche would have a short pastry base so technically its just an omlette. You could make this as a quiche if you layer it on a pastry base tho.

I don't think he "pre-cooked" the spinach in water. He just wilted it in a small amount of butter in a heated pan for about 30 sec.
@Only3wishes, thanks! My learning disorder made me confuse the squeezing water out with steaming in water... I am guessing the precooking is to reduce the moisture from the spinach so it does not make the dish runny... Which means, yes you need to do this...

@xiiaobrandon I think he added the bacon so it adds flavor to the omelet. If you use plain meat, you might need to add salt and other flavor etc.
