@hardcorechicano You eat the shell (which is soft since the crab has just molted...losing the hard shell. The soft shell takes about 24-48 hours to get hard, so the crab hides out in the weeds away from predators until their armor is back). The crabs are harvested just before or as they are molting, so this is the time when the shell is edible). The face, gills, apron, bile sack are all taken off the crab before cooking. We'll do a video about how to clean a soft shell crab coming up soon!
@Etmos: I'm not sure where you are located, but soft shell crabs are shipped to many places beyond the coasts, live, so they come in great. This video features crabs we had flown in to Monahan's Seafood Market in Ann Arbor, Michigan!
They should be in season soon, so ask your local fish monger.
