  • my method is score the rind , coat with white wine vinegar OR oil , then rub in salt , roast in high heat for 20 mins then reduce for the remaining cooking time , perfect crackling every time !

  • Good video, however after drying the skin, it gives an even better result if you rub the skin all over with extra virgin olive oil then rub in the salt, preferably sea salt.
