youve got good skill as a former usda inspector i didnt see you sterilize your knife before cutting the inside and also i would try to get an air knife would cut down on some of the stressors of taking that hide off but nice job
ok. everyone watching this has missed the point of this video series. the man just single-handedly butchered a cow and his ''wife-beater'' is STILL WHITE! master craftsman at work! loved every second of each vid. very informative. thanks :-)
I know this video is dated some time ago, but I found it through the hog butchering one. I ran through some of the comments. I'm a mother of 5 and grandmother of 15. My family eats meat, we raise hogs, and hunt. As a meat eater I have the responsibility to raise them with kindness, breed for health, and kill as humanely as possible. My food has a face not a label. I don't send animals I scratched every day to strangers in places that smell of death to die alone and in fear. My food; my job.
I'm surprised by the sheer number of BAAAAWWWWWing commenters that have no idea what the heck they're talking about. XD I find it funny when people scream things like, "Thats so mean how can u hang dat poor piggy from the celieng liek dat cant u tell its crying!?!?" If they would just take the time to educate themselves and study up on what they so violently protest against, they'd make more valid arguments and thusly be taken more seriously. 8P
Awesome videos. Neat to see the kids getting a dose of reality or real life as you put it. All of our children help in the butchering processing and packing process when its time to put some more meat in the freezer. Lots of folks dont get that this sort of thing is a good education for kids. Good for them to know that there isnt a meat wizard that waves a magic wand to produce steak and burger for them. Too many kids are being raised sheltered from "real life".
butchering has being going on for so long its almost a art now , just because a butcher gets a camera and shows you how its done doesn't mean you can go and bag him , this is how HUMANS eat !! after all plants eat blood and bone ? whats that made of ???? duhhhhhh eat meat stop blaming your problem on others !! p.s pork is the best ,well in new zealand it is !!
@xsk8tergirlx1 Here's a thought. Next time you don't want to see a beef being butchered, don't click on a video called BUTCHERING. Use your damn head.
Looking back on my steak dinner tonight I have to say, hat's off to you sir, fine work...amazing skill, sounds like a g/f running the camera? The way you sharpen your knives, damn, now that shows years of experience...I'm slow at sharpening but then again, I'm not on the clock for the side of beef, just the occasional whitetail in the field. Very impressive, I would have liked to have seen the clean-up methods in the room as well as it would show how sterile a slaughterhouse is.
@SweetJudith12345 So, looking at your profile, I can see people. Your death threats aren't funny to anyone. You have NO IDEA about life and death. The hunter makes the hunted strong. Its people like you that are turning our wildlife overly pampered overpopulated, just like our own species. A prey species that isn't hunted will not survive in the end, period.
@SweetJudith12345 If you've ever had a close family member maimed by gunfire in a far away land, maybe you'd stop wishing death apon others for putting honest food on their plate, rather than masking the stink of their own shit with blissful ignorance. You contribute to the pain and suffering wildlife endures to provide us with roads, malls, etc just like all of us. Maybe try volunteering for a conservation project once in a while instead of whining on youtube. You aren't helping wildlife.
The comments left by that moron are nothing short of amazing. NIce work and thank you for showing this and educating people further on where there foor comes from.
@xsk8tergirlx1 He does it for good reason. They were probably injured or sick. And he also has to make money off of it. hes not just a butcher. hes a farmer too. if he has to put animals down, he has to do it. not just let it die a slow and painful death. he stuns the animals before he butchers them, so they feel no pain at all.
@xsk8tergirlx1 - you do not get it. it's a personal choice. You CHOOSE to not eat meat. Fine by me. You state that you are a vegetarian. Well, what if I am against eating small, defensless, green plants? Shall I curse you because you choose to eat them?
@xsk8tergirlx1 - This beef had a broken leg. Would you have rather had me leave it lay out in a pasture and develop an infection (yes, that would have happened) and die a slow painful death?
@xsk8tergirlx1 <<< Wow. just as he said. it wouldve died anyway from an infection. and it wouldve been slower and more painful. as for dax, i admire your work
Haha...well, when i stick the knife into myself, thats a wound....when I stick it into the beef, thats a kill!! lol
I have stuck my arm twice and my leg/hip 3 or 4 times. Last wound was 3 years ago when I hit my arm taking a head off. I hit an artery....wow, ya should have seen that one bleed!! The worst part is the day after because all the blood is in there between the muscles and such....applying direct pressure to an artery actually caused a buble on the other side of my arm for a day.
Great video Dax. You make it look so easy and anyone that knows a little about cutting meat knows that butchering is a skill along with an art. Hell field dressing deer is challenging for me at times. LOL

I thought that was Montana? lol....When a farmer in MT gets busy with a sheep, why does he do so at the edge of a cliff? .............So the sheep will push back!! haha....
im a kid that could out work you any day and hundreds of animals is a weekly thing i have a mobile slaughter truck and kill any where from 90 to 250 animals a week
Chickens? And I love you you say "I have a mibile..."...yeah, I BET you do...You are one of those who knows very, very little but loves to talk a big game. I have seenyor kind before on here and have dealt with them to. How do I deal you may ask? I ask the same thing always. Proof. Where is the proof? But, if you really think you know something, send me a message and tell me where I can come and watch you...you are prolly nothing more than just a loudmouth that is there for cleanup....lol....in fact, i am pretty sure of it.
Oh of course...ur so amazing..ur so awesome...yet, where are your videos? I see nothing but an empty profile...plus, I know you dont work in a custom locker and you are definately not a butcher. Ur wasting my time here. BTW, check back for the steer butchering and check the speed on that one...alone too...25 min...-dax
do you have a slaughterhouse there or just do butchering? i used to work with my dad doing on the farm slaughter and i also worked for a fair sized meat packing company. i never learned the whole cutting and wrapping part though so hoping you put some vids up for that too because you do a great job explaining the process.
we process the whole animal. from walking in to going out in little white packages. I do the butchering so I taped and posted that. my brother does all the cutting in the front and he is camera shy and wont let me tape him..lol. I will keep trying though...i tell him its like a class...he still doesnt like the idea though...thanks for watching man..
Well now I'm seriously impressed. You did a great job! Personally, I focus on cooking the beef, but in Alberta I've been branding/castrating etc a few years in a row. Hard work, lol! Now I live on Vancouver Island - vegan territory. Bah. PETA wants us all to protect the "sea kittens". Grand, they almost killed the beef industry and now they're after the fisheries too. I'm going to watch your other vids now and possibly reply to bozos I find flaming your vids, LMAO!
what the hell is your problem lose and screw or two. i am not dissing what he is doning no i think it is great. i love to eat beef, pork, chicken deer, any thing that moves that i can put on my grill. i am a long time hunter and i hate peta or any kind of animal rights activist, i was just making a comment on how cool he was in this video, so chill
Here is a little personal fact about me...it has always been a fantasy of mine to club an animal activist with a baby seal....haha...sorry everyone...it just popped in my head and I had to say it..lmao
well something i have realized that since they economy has fallen dramatically that butchering and meat cutting industries are rising we are busier then ever i guess more people start raising their own beef for there freezer now. our butcher schedule is booked til june and we kill on every wednesday that nuts. u all getting busy to or is it just my area.
We slaughter on Mon and Thurs for custom and on Tues for resale. We usually average about 600 beef, 400 hogs, and then a handful of buffalo every year.
In truth, the first time I ever butchered I was about 13. It's a family owned and operated business so I was just sort of "enslaved". lol At least I never have to worry about someone trying to steal my job I guess..lol.
Problably wouldn't have even qualified as a select cut. How old was the cow? Heiferette? Looks like it may have been graded a no-roll or standard. I've sent plenty of fats that make standard and the packer sure discounts the hell out of them.
Lol. This was just an old cow that got its leg broke some way or another. We get a few of these in durring the year, they are always just ground up for hamburger.
And you are an idiot. Do you think your meat is grown in tidy little cellophane packages? Just plant a couple of prairie oysters and out pops prime rib 18 months later? Dax isn't cavorting around slashing and hacking, he's a trained pro doing an excellent job. Next time you're digging into a politically correct "tofurky" dinner, just remember that leather belt you're loosening and the oh so comfy down pillow you'll go to sleep on. Me, I'm having beef. It's what's for dinner ;)
good work mate..watched all 7 of your vids with this animal and you are not a bad slaughterer/butcher.Its ok for people to comment,on some of the other vids..!(jealousy me thinks..lol..) when we have only worked in the modern mechanized abattoirs and slaughterhouses with carnie liberators and rollup skinning machines..well done mate nice job..keep up the great work..Thanks for sharing the vids!...
I would love to have a roll-up skinner. I have never even seen one-never even found a vid online of one either. I know how they work in principal and would love to have one. But. we are a small processor (about 1,200-1,500 animals per year) and that type of big machinery will never be at my disposal. Thank you for watching and thenk you for the kind words.
Thank you very much!! The next beef I videotape will be of a better quality. This old cow was just done on a moments notice. Thanks you for your words and for watching!!
I learned a lot from this series. It is very educational to be able to watch a skilled tradesman doing his work. Thanks also to your camera person. If you do meat cutting, I'd love to see more of your work. Thanks again.
This vid is shot with a pretty low resolution camera...was taped just spur of the moment. Eventually, when we slow down, I will tape and post a much better vid with a description of what I am doing. Thanks for watching and thanks for the support!!
yeah..real hot water. its somewhere around 160F. And the music? lol...u can always tell where i am working...always got the radio on...turn on the lights then the tunes...lol
that was REALLLY! cool

Cheers, Phoenix :)

what the hell is your problem lose and screw or two. i am not dissing what he is doning no i think it is great. i love to eat beef, pork, chicken deer, any thing that moves that i can put on my grill. i am a long time hunter and i hate peta or any kind of animal rights activist, i was just making a comment on how cool he was in this video, so chill

Sorry man... that earlier comment was misdirected then. I thought you were yet another person standing there in horror while a pro did his job.

Here is a little personal fact about me...it has always been a fantasy of mine to club an animal activist with a baby seal....haha...sorry everyone...it just popped in my head and I had to say it..lmao

We slaughter on Mon and Thurs for custom and on Tues for resale. We usually average about 600 beef, 400 hogs, and then a handful of buffalo every year.

your first time doing that must have been crazy.

I thank you Mr, Dax. I am working as a meat cutter at fish market.
I've been to a few large slaughterhouses but you must be very good to be able to do all of this work by yourself.
Keep up a good work.

Hell, I am just average....its my job...but thanks for the words man...and thanks for watching.
