  • Guys, this machine is properly $30 at a department store...you're not going to get great crema. With that said, a better coffee and grind will give you a little more crema than that...at least my old $30 machine did. My guess is that the grind is too coarse and thus the fast, under-extracted shot.

  • Since I'm Italian and I've been drinking coffee since I was like... 5 years old XD... I can say that the procedure is correct... But what about the coffee??? That's NOT strong coffee! It's absolutely too watery! If you wanna make caffè macchiato, you should make Italian Espresso, not American Caffè Lungo.

    And milk is just runny! It must be firm and have the consistence of lightly whipped cream.

    My favorite part is when he describes how a proper espresso shot should pour as we're watching the opposite happen in the video. Gushing runny shot with no crema to speak of.

  • Why does no one support the simple, traditional macchiato?

    Macchiato means "to stain" and is traditionally recognized as 1 oz or less of milk 'staining' 2 oz of espresso (or half that for a single shot. NOT THE OTHER WAY AROUND.

    This video here is just an obese latte (I've heard the spanish prefer to add the espresso afterwards, but I have not confirmed this with anyone who would know for sure)

    Also, a typical shot of 14-16g at a temperature of 198-205F at 9bar pressure *SHOULD* take about a 25-29 sec extraction and be a dark, mottled brown. If espresso looks blonde, the barista is either passing a mediocre shot to you, or they are not truely a barista and sincerely believe that they are doing you a favour by serving you rancor.

  • well...that's a steam machine anyhow so I doubt better tamping would make a difference at all. and obviously this person does not make coffee professionally, and this video is not intended for training baristas.

  • You are right, this is certainly a steam machine. I should apologize for not being constructive in my criticism.

    However, it is these machines that make a good seal with FRESH FRESH FRESHLY grounded beans (seconds before going into the portafilter, if not going directly in).

    I have made some surprisingly nice "home espresso" with my friend's krups. The key to sealing your coffee with these machines is making your own tamp (or carefully sanding the edges of a larger, plastic tamp).

    Size it *just* smaller that the portafilter so that when you tamp (once or twice ONLY. If you can't get it done in just two 30lb tamps, you might as well start over again, adding new beans) the espresso is compressed COMPLETELY EVENLY it NO AIR POCKETS.

  • This is because even with the artificial pressure these machines can build up, the principle that water will always exploit the weakest point still applies.

    ps. I had actually meant to type obese cappuccino, not latte. I was getting my videos mixed up in the heat of passion.

    There's a clip of a drink (latte macchiato) which is apparently just an ounce or two of espresso into a 32oz of steamed mik .

    That's the BEST way to NOT TASTE the espresso.

    This might be a good thing for them.

  • I work in a cafe. I thought a single shot should run 7-10 secs, and then a double shot takes 17-21. At least that's what i was taught. o_0
