1) Use a lime not a lemon.
2) If your gin and your tonic are chilled, you don't need ice at all. Bars put ice in drinks because they can use less product that way and make more money.
3) Why are you stirring a G&T? The pouring action of the tonic water in the glass will stir it well enough.
I usually use 1 part gin to 2 parts tonic and think that's great. I usually use Bombay Sapphire, so it might be somewhat different if you do it with Gordon's. And of course it varies from taste to taste and we've all got our favorite recipes for it.
More surface area on the ice (such as with hollow ice) means the ice will melt faster, which is why Japanese bars use relatively large pieces of chipped ice for cocktails, and use a single sphere of ice for straight drinks, like whiskey, which they so enjoy.

In long drinks like Gin & Tonic the cl of alchool are not important. It just depends about your taste. In order to have a good cocktail take care about the Gin quality!
