  • No way. Cooking a steak on a grill ruins it. The best way....the ONLY way to steak is to do it on flat iron. A grill just burns and dehydrates the meat, and all the flavor just runs out and spills into the fire. A large cast iron skillet heats evenly and keeps all the steaks flavor IN THE STEAK. A marinaded well-marbled ribeye with a good slab of grissle on the side cooked medium rare in a cast iron skillet is as good as steak gets. Period.

  • The first seasoning was obviously Montreal steak seasoning, I cut mine 50/50 with dried garlic. The first time I saw someone coat a steak with that much seasoning I was sure it was going to be inedible, but it came out great. Second was the mop sauce, probably olive oil or clarified butter (or possibly both) and fresh herbs: basil, parsley, tarragon, oregano, rosemary, thyme, garlic, salt and pepper, done. I grill in my smoker and I find it difficult to build up enough heat to get a good sear.

  • First you put all that oil on it, and then place it on an open fire, so that outside is charred black and the inside is raw. A good steak needs nothing more then coarse ground pepper and sea salt.

  • when grease and fire meet you get flame ups which equals BURNT flavors. You should only flip 2 times. I don't know how it tastes but I'm guessing like charcoal, but the top sirloin butt I bought from y'alll was great.

He was getting a quick sear on each side but I think he did it too long maybe. The grill looked kinda small for 2 steaks and seems like might cooked too fast after coming off the chimney

  • @gadget956 thats the problem doing them like this. the outside is charred but the middle is bloody. get a good grill...put hickory and apple wood chips in it...cook for 35 minutes. It's low heat, the inside gets done as well as the outside..with nice wood flavor.

  • Good idea on searing over coal chimney. Show us how it cut after resting. It is really tricky cooking T-bones and porters since filley gets done much quicker than NY.
