Even the book is pretty non-specific as to why Valjean dies...it just talks about a coldness creeping up his system until it reaches his heart. Circulation problems? A thrombolus moving towards his heart? We'll never really know what Hugo was thinking when he wrote it, I suppose.
This may sound corny, but it's true: a person could die of a broken heart. When a person reaches a certain level of hopelessness and depression, their body could quite literally shut down, and Valjean's life was far from easy, especially after having recently, in a way, lost his daughter. Age could be a factor, but he died at 64; he was born in 1769 (he was 46 in 1815 according to the novel), died 1833 (about a year after the fall of the barricade) which is not ANCIENT even for the time period.
he died because he'd finished what he'd started- he knew that now Cossette would be okay with Marius, he could rest in peace and be with God, because his wrongs will have been forgiven.
