This was the best tasting caramel sauce I ever tasted! Never thought it would be so easy. The key (I think) is that you cannot stir it until it is caramalized. As an "over-stirrer" this video was extremely helpful! (over cheesecake it is to die for!) THANKS!

when you add the cream to the sugar, butter solution, the milk fat, and the sugar in it, are cookinng, and browning, to make it look more caramelized.
It looks like this is being done in reverse. I guess there are several ways of doing caramel sauce. I usually start with water, and sugar, then after caramelization begins, I then add the cream and butter. Like I said - it is done differently every where. Great Post!!!! Thanks!!!
