For my grill, I put my grates in my oven when I run my weekly self cleaning cycle. Than after the clean is done, I rinse the carbon off with water and spray the grates with canola oil. I use a spritzer but you can use aerosol canola oil. Let it sit for a couple minutes, than I fire up the grill and let it cook for 5 minutes to help the oil season the grates like it was a skillet. Than kill the heat, let it cool completely, than cook. (You can use lard to season, but it's messy.)
@feloniousbutterfly I would not want a chef that was less worried about this stuff. Sure, the average homeowner can get away with a little cheating, but not someone who cooks for a lot of people.

Dude, it's called a time constraint. He's not just giving you recipes, he's TEACHING you about the food. You should go watch episode 1 and wait for the part where he says "Because you get to learn about the food, and that's better than any recipe".
Oh and, he helps come up with the recipes too. AB graduated culinary school and IS a certified chef.
