  • looks good, what kind of noodles are they? I just tried with the thin egg noodles and hand trouble getting the noodles to seperate and fix in with the chicken and veges, might try thicker noodles next time.

  • @farrell360: I actually bought some green bean vermicelli noodles last week, they're good for stir-frying, they're very thin, almost translucent in colour and pretty much foolproof.

As a Hong Kong'er, my mum doesn't know how to make stir fried thin noodles properly. She makes them basically noodles+soy sauce. nothing else. So i'm looking for a vid to teach her.

    Fry beef with onions

    1 table spoon of Soy Sauce

    Splash of Vinegar

    Table spoon of Olyster Sauce

    Splash of premium dark soy sauce for colour

  • Kai m y good man, i heard that when you finish boiling noodles you let them sit in the drainer and pour the soy sauce sugar and hoisen sauce in themwhen they are in the drainer. then you stir and mix and let sit for a couple mins before you fry the noodle with the vegetable. is this correct?

  • if you use hoisin sauce and you put another sugar its too sweet is'nt it. 1tbsp of oyster+2 tbsp sugar it balance the taste already

  • Kia: Love your videos. Just to be clear was the 1st sauce you marinated the beef in oyster sauce or hoisen sauce?

    Also what kind of noddles and how do you cook them? I have bought rice noddles but am not sure if I just blanch them in hot water and throw them in the wok or do I boil them or cook them in oil?

    Im sorry for such a basic question but I am very new to Asian cooking and dont want to assume anything.

  • those are udon noodles(japanese weat noodles) ,you can buy them fresh in most asia-markets and they need to be cooked for 1-3 minutes...

  • the sauce at the beginning is oyster sauce. the noodles are called udon noodles. i hope this helps

  • I really enjoy your recipe's and your demonstrations are very easy to follow. Thankyou. I have a question. Is it OK to use the frozen bags of pepared vegetables from supermarkets? It saves time on preperation. Is it best to de-frost first and get to room temperature or can i fry from frozen? Thankyou again.

  • it depends what vegetables. some frozen vegetables have no comparison to fresh. regarding this video, you should use fresh onions and peppers. just cutting them into long slices isn't hard, plus you'll get a better flavor. BUT if you really want to use frozen, defrost them first because if you put frozen vegetables into something really hot (especially this dish) it will make everything soggy and gross :P

  • Almost all of mine cooking I used black or red vinegar from Koon chuung's product of Hong Kong.

    Im pretty sure it is cause ive watched many videos from kai. Correct me if im wrong someone.

  • its a sweet sticky chinese sauce. use sparingly!

  • Hoisin is a sweet, sticky sauce, sometimes known as Plum Sauce

  • hoisin sauce is bean based and is black and sweet

    plum sauce is plum based and is sweet and sour they are not the same

  • its a sweet bean based sauce. black/brown color. you buy in bottles "hoisin sauce". you can use it for any meat dipping like chicken or roast pork.

  • hoisin sauce, rice wine, rice vinegar, sesame seed oil (optional)....

  • sesame oil smells SOOO nice when its in the pan!

    Remember when u use fish sauce, it is VERY strong, so a little goes a very long way

  • looks like u used udon nooodles ... wad diiffrences between udon n Yeloow egg noodles

  • Udon is made from wheat/rice flour, there are no eggs in them. Kai probably used what he had in his pantry, as far as noodles go, used whatever you have on hand. Just be careful cooking them, because some noodles tend to turn mushy after cooking it for awhile.

  • Udon is chewier

  • You guys can also substitute the beef he uses in his video with any type of meat including chicken, and pork. Also, your not limited to onions and the peppers, feel free to add carrots and bean sprouts, and cabbage. This way you can make it healthier and also heartier. Enjoy!
