You can just put them in the oven until the skin burns/puffs up, then let them cool on a plate and peel them with your fingers. Then you can slice down one side and remove the seeds. That way they don't shred at the bottom like yours did.

Dont use a paper towel! Cover it with cling film and put it in the fridge for 5 min then just peel the burnt skin off with your hands!
