I don't mean to be rude, but those arent "Enchiladas" they actually look like tacos, something more like flautas. One tip: Corn Tortillas are the BEST for enchiladas, and enchiladas were never meant to be baked. Tortillas just warmed/lightly fried smothered in the sauce, rolled with crumbly cheese/onions & top with same thing but different sauce. My mom makes traditional enchiladas and they are simple and delicious, but NOT with flour tortillas. At first I thought you were making burritos, LOL!

You must be the best mom/wife ever! I really appreciate the cooking content you put up here on youtube. It gives me a good insight on the american side of cooking, but there is one thing I ask myself: Here in Germany it is more or less frowned upon using ready made stuff from a store (i.E salsa in a glass) when cooking. Especially since the salsa makes up a large part of the taste when cooking enchiladas. So why not make make your own salsa and therefore your own taste? Have a nice day!

In a recipe like this, if you don't want to use bottled salsa, just go to my salsa recipe and make that before beginning the recipe. This is a different take on chicken enchiladas. They look delicious. I myself use corn tortillas & quickly saute them in hot oil before I fill them & roll them. I use either cheese or chicken 4 filling. Than the green chili, cheese and goodies. But,1 idea, from the way u made yr enchiladas is similar to the way I make burritos. They can be chicken, ground beef, etc burritos, I fill the tortilla, roll "em, & add home made salsa & cilantro in burrito. Filling 4 burritos a different way though.
I have an idea. Us Mexicans don't use flour tortillas for enchiladas. You can try corn tortillas. Yellow or white. They are both the same. Just for a little bit of a different taste :) Just a thought
@vgfigue I have a couple of enchilada recipes in bettyskitchen that use corn tortillas. I did this dish with flour tortillas, just to change things up a bit. I should have pointed out that these are not traditional!

Dear Betty: I've watched tons of your videos and have written down so many of your recipes. This is the first one I made, and I made it tonight. I'm vegetarian, so I used vegetarian chicken in place of the real deal. My boyfriend LOVED this, and so did I! Thanks for taking so much time to do these videos. We really appreciate them. @bettyskitchen They say it's the easiest bread to make.I think there's two types of flour,baking soad, a small amount oats (like from oatmeal)&buttermilk.I heard you mix it all together and rolled it with your hands like 5 times only&shape it like a round small loaf of bread&put it in the oven& bake for (i think ..like 25 minutes).There's no rising time at all.I've heard it's the easiet bread to ever make&it only takes a few ingrediants. You probably have everything but the buttermilk Thanks!
OH that looks so good! I'm not a big fan of the red enchilada sauce so this will be perfect for me ;) I can't wait to make that. @bettyskitchen I luv buying rotisserie chickens when I don't have the time after work to cook a chicken.Plus the flavor from the rotisserie chicken is SO good.You get that great dark meat chicken which is so moist.The white meat is good too, but that dark meat blends so well b/c it's so moist,tender&tasty.Best part a ready made rotisserie chicken is like $5.00&all the work is done&ready.I use them all the time even 4 tacos.Do U have a rotisserie cooker?If so,mabye U could do a dish that way.
Hello Betty! I Love all your videos. I'm Mexican, so I can recommend, use corn tortilla instead flour tortillas. Flour tortillas are best for burritos and quesadillas.
Corn tortillas taste best with the Salsa verde.
The way you did the enchiladas, is like we call Flautas here in Mexico. The enchiladas are a little bit diferent.

@SinnFein4ever I may do some pumpkin bread, cupcakes, and popcorn balls. I have already done pumpkin pie, pumpkin muffins, toasted pumpkin seeds, and Halloween cookies--those were posted last year at Halloween.
As for me, I'm thinking of making a graveyard cake again this year.
I bake two large rectangular devils'food cakes, and put some strawberry or rasberry jam on top of one, and then some gummy worms, then place the other cake on top.
Then I cover the entire thing with dark chocolate frosting, then use some milano-like cookies for the tombstones. Then I dip some twigs in wax for the forest, then last, I put a scary-looking little toy figurine in the "graveyard".

@MrsMSG79 prettyinpun666 has a good answer. I wait until the end, because I like the enchiladas crisp--not soggy at all. You can bake it with the sauce on, but it will not be as crisp.
@MrsMSG79 That's how I usually make them, but with tomato sauce. I'd put the sauce on near the end of the time in the oven, if you like to soften up the crispiness but not have them go really soggy.
@barbielovesmac100 I salted the chicken breasts, but I did not add any liquid. I cooked it on high, and it probably could have been considered "done" maybe after 6 or 7 hours, but the 8 hours made it very tender.

what can you substitute for cilantro. I've heard you either love cilantro or hate it. And I'm one of those who absolutely do not like the taste of it. I think I may even be allergic. If I get something at a resterant with cilantro on it it ruins the entire meal for me. I'm not picky, but this is one thing I won't eat. I just wondered if you had any suggestions for another flavor. Love your videos! You feel like one of my best friends~
@jb092306 You can use fresh parsley in place of the cilantro. The flavor isn't as powerful, but it is a nice delicate flavor that most people would like.
This looks really yummy. When I make green chile enchiladas I add cream of chicken soup with the sour cream so it is a little more creamy and not so dry.

@ahsookie1 I would add about 1/4 cup water in the bottom and then stack everything else on top of that. With the lid on it will stay nice and moist.
