Your all about the presentation of cooking the food but not plating or taste of food. I didn't see a onion volcano which is pretty popular in this type of cooking or you didn't crack the egg on the spatula. you have impressive hand skills, cooking i think not so much

If he did everything the typical way, what would be the point? Being a chef is like being a musician, you have your own style/way of doing things, that's what makes it worth doing, if you play music and mimic everyone else, are you gonna get anywhere? No. And, you can't judge how the food tastes by watching a video, I don't believe they've developed that kind of technology yet.
