I remember my version of Holiday Hare had the same problem with sound. I think it's the fault of the add-on itself.

I can tell you what's wrong with the audio. Jazz uses stereo effects with contrary waves on each channel. This sounds perfectly well as long as you hear it in stereo, but YouTube recompresses the audio track to mono. And merging two contrary waves results a complete silence. That's why major parts of the music are missing. You have to convert the stereo track to mono manually by using either the left or the right channel.

That has nothing to do with the audio codec, that's just simple physics.

It's just certain music channels that could not be properly processed by youtube due to a faulty audio codec.

Check the description, it says certain channels (like the bells in these two levels) were completely wiped out.

In the meantime, I have actually found out that some music channels in early Epic games were put on (fake) surround, meaning that the right channel was an inverted copy of the left channel. Until YouTube introduced stereo sound, this would result in the right signal cancelling the left signal, i.e. the melody would become inaudible. Gladly, that's not a problem anymore with YT's stereo codecs.

Dunno why but i cant play this game! I install it ( it has a DOS setup ) and after that i see no executable, where can i find a good playable version ?

There should be at least three executables in any version of JJR: Helpme, Jazz, and Setup. You don't see any of those after you install?

I do... and when I run JAZZ.EXE it shows me some options, after i select them the exe closes and nothing happens

Maybe you have a bad copy. Are you using DOSBox?

Nope, it doesn't come standard. It's an open-source DOS emulator which can be downloaded for free. Just do a search and you should find it.
