In BeebEm, make sure you have Default Key Layout selected. Then the keys are Z left, X right ' - accelerate / - brake. You have to be moving before the bike will turn.
I also had this on my Electron. Why didn't you knock any of your opponents off? That was the best part of the game - you just need to get alongside (and slightly ahead), and ride into them to send them flying.

I had the Acorn Electron version of this game, played it to death & had a lot of fun. Some great memories there :-)
