They are ankle supports. As beginners, we normally wear them on both ankles as we strengthen ourselves to being on our toes. As you build the strength, you usually only wear them if you have an ankle that's bothering you, because its real easy to strain your ankle if you accidentally kick your target wrong.

One of the key things I showed this guy was how his range was wrong because of his footwork. He was stepping towards the bag rather than stepping off at a 45 degree angle. Therefore, he was "crowding" the bag which didn't leave him the room to rotate, and he was off-balance.
yea its obvious, he's doin 2 things wrong. Firstly; not pivoting and spinning through high on the ball of the front foot, secondly; not flipping his hips over.
