  • Man, I've never seen a chicken butchered so quickly! But I'm a bit confused by him calling that little bit in the middle of the breast the 'supreme'. Everyone else that I've seen uses that term for the breast with the wing bone attached.

  • @beeble2003 I was taught that the supreme is that strip marco called the supreme then the whole breast he used was just that, the breast. You could say it was french trimmed, but yeah its the supreme in my opinion.

  • @JimmyDasnitch92 Are you referring to the yellow skin and flesh? That's what you get when you feed chickens nothing but corn it's whole life. It gives the chicken a richer flavour, but a bit of an acquired taste, if you have eaten nothing but bland supermarket chicken your whole life.

  • @dsfogg85 All eggs have those it is called a Chalaza. It suspends the yolk in the center of the egg. Free range eggs have those as do caged eggs.

  • I love how straight forward and frank these recipes are. He rarely elaborates, or tells stupid stories, just runs through step by step simply. The whole thing might be an advert for Knorr, but a - Knorr stock pots are amazing, and b - it's better presented than pretty much any other video recipe series I've seen.

You guys want to make fresh stock everyday which takes like 2 hours to complete and ingredients that eventually got wasted since u only take the stock? Good luck trying that.... eh nevermind most of you guys only eat Mac-n-Cheese / Top Ramen / Pizza everyday so why bother telling.

  • @FrodoDojo-also there are some other videos of him on youtube in his younger years called"Marco cooks for"where he cooks for some of the chefs who helped train him its a programe from the eighties

  • well, knorr products is very famous here in asia...esp hong kong, and philippines...so i used it, but if u use chicken stock, salt and pepper, it can be a somewhat subsitute for the product...its just that some food that i cook with knorr doesn't taste good! it has a funny taste, i mostly only use it when i stir fry veggies...or make stews!:) happy cooking everyone!

  • @FrodoDojo this guy helped train gordan ramsay,hes a legend in the cooking world because he was the youngest chef to get 3 michilin stars at the age of 33.(he isan,t the youngest anymore)and he also apparantley used to have a very very bad temper.reading a section of G Ramsays autobiography to me it sounds like gordan learned the way he is in a kitchen,he learned some of it from this guy.although it sounds like this guy was alot worse than ramsay.he,s taught most chefs including mario ballateli

  • Marco shows great technik, leaving the wing drumstick on. Chick supremes(also known as chick tenders) only come w chick when you buy them whole. Otherwise opening-up the chick is a great solution depends on size of chick you buy.

  • Pre-cut breast, wings, etc.are kind of a new thing. Most groceries (here in the states anyway) before about 1970 didn't sell the pre-cut chicken breast. U had to buy a whole chicken and cut it urself or go to a butcher and have them cut one up for you. Any meal that required breast filets was hard work back then, because U had the cut the chicken from scratch if you bought the chiken whole. Things have changed obviously and kids are growing up thinking pre-cut meat just grows on trees somehow.

  • I don't think anyone should lose any respect for marco he's just doing it for the money and why not he worked his ass off when he was younger lost social times cus all he did was cook and now he wants to make easy money then have the fun he missed out on he's still a 3 star chef so he gets my respect.

  • @MrDontstareitsrude he is not a 3 star chef anymore he gave them back when he closed down his restuarant. as for these vids what is worse is not his selling out for easy money it is how old and worn out he looks and acts like those old rock stars now in their 60s and making a fool of themselves. you will never gordon doing this.

  • @rostant999 Gordon is not even in the same league as Marco, it was Marco that trained him for 1, and 2, you get nowhere in life by shouting and swearing and belittling people, Marco inspires people, Gordons just a wanna be chef with a floppy hair cut who can only get his way by calling people idiots and swearing at them.   • @MultiLoveMetal from what i have heard and seen on other vids marco had the worse temper and terrorized gordon and other chefs (mario batelli worked for marco breifly, anthony bourdain mentioned gordon is likehow he is because of marco's treatment of him). i dont which is best i never ate eithers food. but look where they are now, marco looks acts and talks like a rock star after their career burt out and they got out of rehab. you wont see gordon vid using ketcup sauce would you?

  • @UReadThisName they're gordon ramsey fans, i think. this man out-ramsay'd gordon ramsey by miles, and ramsey was on the receiving end back in the days. mp white gave him one hell of a bollocking BUT while and shortly after doing that, basically jumpstarted ramseys career. regardless of old times, there hasnt been any man to man damagecontrol, no dealing with things, not a thing between these two, just constant back and forth via pr reps. they're both being silly behind the scenes.

  • even the way he cuts up that chicken breast w/ the bone attached is awesome. he also worked at roux's butcher shop where they had to cut meat per customer's planned dish on top of his restaurant experiences, so he's highly skilled & knowledgeable, isnt he. the final appearance of the breast looked like a swan w/o the head. very cool. i guess frying the parsley was for flavor to the oil. the garlic's core being bitter was something new i learned just now. great video. thanks.

  • Another thing I like about these videos is the silent background. You don't hear anything else but him and whatever's going on in the kitchen, so the focus is on the food. When he says "it'll burst" it felt like I shat my pants.

  • I love his method of stuffing the chicken with garlic butter. He did the same concept in "Marco cooks for Nico"(search it!) with a sea bass, stuffing it with a scallop mousseline and not telling the customer that it was stuffed. You can't even see it at all.

    Much much better than Ramsay's method of making Chicken Kiev.
