A well-made pelau is the greatest with a fresh salad - cucumbers, lettuice, tomatoes, etc. Yummy! Ochroes may be substituted for pigeon peas - minus the coconut milk.
I'm gonna do the Pelau... sounds delicious!... Can't wait to visit friends in Trinidad, for the first time,I used to be a chef, so as you can imagine.... I will 'eat' my way down the street! haha ! I never put pumpkin with coconut before... but just 'know' it will 'work'! Thankyou :)
I am going to have to try this way of doing it, I bet the flavors are more concentrated without the liquid of coconut milk and water. The final plate looks so tasty
Bess pelau video up in here !!! I watched this, made it and it turned out prrrrfect. The only thing i would do differently is add coconut water instead of water. Also i like my rice grains to be separated and the chicken to retain its flavor, so i would use half the amount of fluid you used and allow the steam to cook the rice and plump everything up.
Yummy, looks tasty. I want tyo learn to cook Trinidad dishes

What was the total cooking time in your presentation?

Approximately how much rice in cups do you add?
sinfuldavy0 3 weeks ago
Were you adding the chicken in batches? Because the amount of chicken does not seem to be the same amount you seasoned. What's up with that?
sinfuldavy0 3 weeks ago
Next time rinse the rice in some water.. til the water runs a little clear :)

brooklynboi89 8 months ago
@brooklynboi89 Flour O_o? you don't flour the chicken AT ALL!!!......Unless i misunderstood ur question?
16taffi 8 months ago
@16taffi In part 1, he marinated the chicken in flour.
ChaosDave2 7 months ago
@16taffi i thought flour was put on the chicken during the cleaning process to get rid of the freshness
