  • The eggplant burns by 10 mins. 2-3 mins on high and 3-4 mins on med.

  • are you sure the egg plant cooks for 10 mins for each side? by that time the eggplant burns... I think it would be 2-3 mins on high and 3-4 mins on medium heat.

  • One word... Awesome!! I tried this and it came out perfect. Thank you so much.

  • yum! That looks good. Thanks for sharing.

  • Polish way is a dry-wet-dry, which translates into flour-eggs-breadcrumbs. This way you don't need to drain the thing you're frying. Works great with fish and many other things.

  • This looks VERY good. I am going to try that garlic and onion flavored olive oil. This is pretty much the way I make fried Eggplant except I dredge the Eggplant in flour, then egg and then breadcrumbs.

  • @bgoldrock I'm sorry, haven't noticed the end of your post :)

  • Can I use biscuit crumbs instead of bread crumbs?

  • very nice recipe and taught very well....thanks..

  • Looks yomy

  • I am vegan so can I substitute something else for the eggs? I live in Saudi Arabia and can't get an egg substitute/replacement from supermarkets here.

  • This looks very good. I think I try this!

  • I love the skin it's tasty and wilts when cooked!

  • Some ppl like the skin fool

  • Its different when u use different combination for deep fry.thanks for sharing this.

desiabhay : You must learn to appreciate things that you see around rather than judging it in un-courteous manner.

  • If it is describing ingredients, techniques, and cooking times and measures,it is a recipe.Webster says so.And aesthetically, you have the right to be let down if it is not complicated or fancy enough, but I also recommend you investigate the ability to appreciate that perfection tends toward simplicity, and a simple recipe done great is better than alot of very little.Meaning the more complicated, the more chances of screwing up.And it can be vulgar to not appreciate purity,(or not understand depth)

  • @BushiBato i know the definition of recipe. all i meant was this process was so very obvious you dont really need someone to explain it to you just as no one needs to teach you how to make maggi noodles! and yes i like to cook complicated recipes.. really really complicated ones.. i go that extra mile, spend hours and cook delicious food whenever i can.

  • Hi Desi,is it.Well on one hand I hope there is no animosity,I apologize for that if you feel that way,on the other hand it is a bit presumptuous to say things the way you said,it might discourage someone from sharing something good, which possibly you might not see in her,or at least this recipe.I commend you for your love of the kitchen.I am a personal chef, culinary grad etc.And I break my back and mind to go the extra mile, but I invite you to explore the world of that one, simple, pure way(tbc..)

  • @BushiBato btw my name is Abhay and not Desi. and secondly m glad that you took out time to appreciate this dish and also commented on my comment. I had not intended to be rude, merely expressed my disappointment. why dont you share a good eggplant recipe with me if you dont mind! i am no culinary grad or anything just a cookery enthusiast....forced to start cooking since i've been away from home for more than 2yrs.. anyways.. Happy Cooking!

  • of cooking, when you can draw out of the simplest possible recipe;the depths and nuance of ANY complex recipe.I once thought it was the more the merrier. Now I have matured as a chef(and person I have been told)and I realize that there are times to go long and complex, but there is need for balance, and when I pull of in 1/4 of the time, with 1/3 ingredients and half the effort, the results I get from complication,it makes me feel great.TRUE simple cooking requires the highest level of skill & taste.

  • One question: I don't eat or cook with eggs at all. What can I use instead of egg to coat the eggplant? Could I just use olive oil instead?

Thank you. This recipe looks GREAT!

  • Hello LovesAllOfYou - Yes, you don't have to use the egg for this recipe. Also you can season the eggplant with other herbs to give it more flavor. Can be fried with all purpose flour, bread crumbs or on its own. Hope this helps, thank you for your comment and let me know if you give it a try.

  • @LovesAllOfYou - In place of beaten eggs, mix plain flour with water to a consistency of a beaten egg. Coat the eggplant in this mixture. You would get the same result without sacrificing the taste. Hope this tip helps.

  • @LovesAllOfYou You can also use a dollop of mayo with 2 tblspns of water or oil as an egg substitute.

  • @LovesAllOfYou YES OLIVE OIL HAS NO CHOLESTEROL

  • Looks really good. I've never tried fried egg plant. I usually cook my egg plant with pork and onion, it's my favorite.

  • where is garlic and onion ?

  • Where did you put the garlic and onion?

  • I used onion and garlic to flavor the oil. I didn't use them further in this dish. You don't have to discard them. You can sprincle them on the fried eggplant s if you like.

  • it looks really great.. i really love egg plant..

  • im making this for my friends tonight, my moms gonna help though

  • Love this stuff.

  • My daughter loves this in pita bread and eats it like a sandwhich. Thanks for sharing.

  • I love breaded fried eggplant. My mother used make it all the time, but used flour instead of bread crumbs. The only down side was if my father was in the house he would eat them as quick as she made them and she would have to hide some for the rest of us, lol.
